I make a version of these for breakfast most mornings for my crew. We have a small flock of chickens, so we enjoy fresh whole eggs and whatever else I have on hand to stuff in the burrito. Sometimes it’s just cheese, but my son loves bacon, so I try and include it at least once a week! I skip the bacon and add avocado and some tomatoes to mine. I don’t scramble my eggs; just let them cook for a few minutes, put the cheese and whatever else on top, and then place the tortilla directly on the cooked egg. Let it get warm and stick to the cheesy egg (about 45 seconds), then flip it out of the pan, roll, cut it in half, and serve! It’s way cheaper and much faster than the fast food version of the bacon, egg, and cheese. The kids usually eat this while walking out the door! Diets often fail, but how we think about food and picking up better habits is an excellent way to level up our nutrition game. What’s one weekly nutrition habit you could work on this week?
