Sometimes doing some prep work the night before helps bring all the flavors together, the next day. In our Latin dish, Thomas showed us how to take the “bite” out of onions as he likes to top his flank steak with the pickled onions right before he serves the tacos. Here’s a short clip of how to pickle onions, hope you enjoy it.

Cut onion in half, thinly slice, and pack into jar. Add salt and thinly sliced peppers. Add lime juice, enough to cover all ingredients. Cover and refrigerate. Best when prepared day before meal. Store in refrigerator for up to one week.
