Today is the thirteenth day of a brand new year – and we’re sharing a great recipe we discovered on the MyPlate Kitchen website, a tasty-looking Southwestern Pepper Cups recipe that is a hearty dish for chilly days!     My plate recipes are quick & easy.This one called to blanch peppers before baking them. Nice to learn new tips.

      I would use red or yellow peppers as I don’t care for green peppers.
